Do you think Sebastian and Ciel care about each other in the anime?
Hi there! Thank you for the question - I'm frankly surprised because I have just joined the fandom and haven't even contributed anything so far. If you saw any of my few posts, then you know I only watched anime, so my answer will be based on it only (so - SPOILERS). Also, I had a similar conversation recently, so I'll synthesize my answers.
Yes, in the anime, Sebastian and Ciel very clearly care about each other. Their relationship is many-layered and complicated, and that is what draws me to it.
In episode 9 of S1, Ciel applies many efforts to acquire a camera that would let him see what Sebastian treasures most. He goes as far as risking his life to learn about it, asking Finnie to drop that huge statue on him in the hope that Sebastian will save him and Finnie and Co. will have a chance to finally make a photo of him. Interestingly, Sebastian destroys that photo, so we never learn what it showed.
In turn, Sebastian photographs Ciel, and it is revealed that the most important thing for Ciel is Sebastian. Considering that the photos show only those 'out of this world', like Finnie's dead bird, it means that Ciel treasures Sebastian even more than his dead parents, which says a lot. Naturally, Ciel is embarrassed and sad when the truth is revealed, and even his coldness doesn't mask it.
Ciel is scared of Sebastian being hurt. It is obvious early on, like in episode 2 of S1, when Sebastian is shot - it does nothing to hurt him, but Ciel's first reaction is fear, and not for himself or his revenge - he doesn't have time to think of that. He just looks terrified and screams Sebastian's name. He is similarly stricken when Sebastian is hurt in attempt to protect him from Madam Red. In the Book of Atlantic, Ciel is also scared for Sebastian – he calls his name in panic when he's unconscious, and then tries to deny the fact that Sebastian's wound is severe by refusing to believe in it and acting as if everything is fine. His admission that Sebastian did well later is unusual for him – it shocks Sebastian. For cold and collected Ciel to say something like this means a lot. When Sebastian is tortured and Ciel knows it, he sees Sebastian in other people. It clearly doesn't leave him indifferent. He looks sadly at the tea Abberline made for him – it must taste differently, which reminds him of Sebastian and where he is once again.
Ciel wants to have a soul that Sebastian would consider worthy of consuming (according to him toward the end of S1). It certainly speaks of his rather deep and conflicted feelings – he craves Sebastian's respect, and while Ciel enjoys being respected in general, it is shown that Sebastian's esteem in particular matters most to him. He is desperate when Sebastian doesn't eat his soul after Angela's first supposed death – he throws himself at him and asks him 'why'. When Sebastian abandons him in France, Ciel has a choice to make – he can try to build another life for himself or he can continue with his revenge, which he started to recognize as stupid at that point, giving his soul to Sebastian afterward. He chooses the latter. In fact, he criticizes himself for basically becoming unworthy and for making Sebastian leave him because of it. In S2, he tells Alois that his soul is not as cheap as to be consumed by spiders (meaning both Alois and Claude), but he obviously thinks that Sebastian is worthy of devouring it.
Ciel is devastated by Sebastian's 'betrayal' in S2 – this is what sends him into the darkest pit of hysterics. He is crushed the day after that – he brings up Sebastian to show that he is better than Claude before remembering the 'truth'; he succumbs to hysterics once again in the garden, he doesn't want to go back home, and he refuses to make a contract with Claude to make Sebastian pay. He tells him he will do this by himself. When Claude touches him and Sebastian crushes all the trees outside, Ciel clearly suspects it is him, considering his satisfied gleeful look – so, it means that Ciel knows that having someone else take care of him will make Sebastian angry (though it probably refers to Sebastian's feelings more than Ciel's).
In 'Ciel in Wonderland', Ciel spends the entire time chasing Sebastian and trying to prove to him that despite everything, despite losing the soul and/or memories, he is still the Ciel Sebastian knows and cares about. And Sebastian comes for him as soon as Ciel realizes it himself.
Ciel clearly loves being touched by Sebastian - he is even called out on it by his servants. In the Book of Atlantic, he didn't like it in the flashback, when he still wasn't used to it. In the 'present time', though, he is constantly carried by Sebastian, in most cases without even needing it. He wraps himself around him fully, hides his face in his shoulder, and so on. In the Book of Circus scene, in episode 9, in the midst of an agonizing flashback, Ciel finds Sebastian's touch soothing. He presses himself to Sebastian closely, and when Doll tries to touch him later, he shouts at her to take her hands off him while snuggling closer to Sebastian. He calls his name when he sleeps, when he just wakes up, when he is distressed. Everything about it speaks of his trust and comfort when with Sebastian.
There are numerous things,small and big, proving that Ciel cares about Sebastian very much, more than he does about anyone else. He is a cold and complicated child, though, so his actual feelings come to the surface only occasionally.
Now, as for Sebastian. Sebastian calls Ciell unique, special, worthy of the duel, something that spices his world up many times in the anime. When Sebastian says to Ciel that he never ceases to amaze him and adds, 'What else could I expect from my soul… no, from my Master' in episode 18 of S1, it is full of tenderness and amazement. Sebastian is astonished and pleased that Ciel is so strong that he managed to restore his own memories. His fear and care for Ciel are shown as going beyond the contract - he scares off people who are unwillingly rude to Ciel, for example, like the man selling them the cane in episode 3. Whenever something happens to Ciel, Sebastian is depicted as being genuinely scared – maybe it's up to perception, but I see him worried for Ciel himself first and foremost. Like in episode 5, when he thinks Madam Red is going to kill Ciel – I've never seen him as terrified. I guess we could say that he still cares about his soul only, but their contract definitely doesn't say anything about the level of comfort that Sebastian tries to create around Ciel.
All those moments when we are shown how Ciel shocks Sebastian, how his eyes widen, how he gasps say that Ciel is one of very few creatures who can take him aback, make him feel something. Sebastian is a demon, though, so I think his love and affection are inevitably tied to his attraction to the person's soul. He finds Ciel so unique that he refuses to satisfy his hunger with anything less worthy, and even when he seeks to devour Ciel's soul, he is full of tenderness.
In episode 3 of S1, when Sebastian leaves Ciel after he falls asleep, we are treated to a rare moment of Sebastian's emotions. He recalls Ciel announcing that he doesn't need his ring to be a head of the family (which pleasantly shocked him), then recalls Ciel asking Sebastian to stay with him, and he presses his hand to his forehead. It affects him - all moments when Ciel surprises him, when he allows himself to be weak, even though it is his strength that Sebastian admires. Sebastian fights it - in that same scene, he chooses to laugh and discard it, but that brief moment of wonder, of him pressing his hand to his face, is very vivid.
Sebastian realizes that Ciel started to doubt as to whether he needs his revenge, and he leaves Ciel in France after wishing him happiness - he half-breaks the contract, giving Ciel a chance to change his destiny. And he doesn't abandon him still - he appears in the form of the cat to guide him. However, London gets blown up and Ciel comes back. Yes, Sebastian claims that he was improving Ciel's soul like this, but how so? Wouldn't the soul be tastier from bitterness now that Ciel actually wants to live/join his parents in heaven? Not to mention that Sebastian already had a perfect chance to consume Ciel's soul as it was Ciel who didn't let him finish Ash and the Queen off, thus breaking a part of the contract (like he almost did in Book of Atlantic in the flashback). He didn't. It seems like Sebastian was prolonging the moment as much as he possibly could. Don't get me started on how he does the same in S2, taking even Claude aback by it. He could eat Ciel's soul as soon as he woke up; he could tell Ciel the truth about his lost memories, revel in his confusion and anguish, and eat him; finally, he could come up with a less complicated plan and let Ciel take revenge on whoever. I'm not saying Sebastian wouldn't eat Ciel's soul at all – I think he would, even though he could regret it later. But he clearly prolongs the moments he has with Ciel.
In 'Ciel in Wonderland', Sebastian makes tea for a soulless Ciel who cannot drink it and reads him books while he sleeps. I mean… what is it if not caring? People do that for unconscious loved ones, not for those they consider inferior. Ciel is in no state to order anything or see Sebastian's loyalty, but Sebastian still spends time with him and tries to maintain their routine – he misses him.
Another major thing is the ending of S2. Sebastian was told by Hannah that as soon as Ciel wakes up, he will do it as a demon. Sebastian had a chance to kill Ciel before he wakes up. Instead, he gently catches him and waits for him to open his eyes. He does attack then, but I see it as the explosion of frustration and anguish. Sebastian had every right to kill Ciel before he wakes and take his soul - he didn't. Finally, he could kill him after Ciel became a demon - we saw on Claude's example that contracts can be broken, torn, distorted, and so on. But Sebastian remains with Ciel. He is conflicted, he is probably in denial, but he chooses Ciel still.
Those are just the things that I can remember right away - there are many more. And sorry that it got so long :D I'm planning to write a story about Sebastian and Ciel, so I've been thinking about it all in depth these days.

I am curious tho — what partially drew me to start watching it is because I love ships with possessive behavior, which is one of the popular tags of sebaciel. Are there any key parts that you recall in the series where obsession/possessiveness is very apparent? (I'm too early in but I'm assuming it's directed from Sebastian towards Ciel.) thank youuu ❤️
Oh wow, I'm so happy to hear this! :D I love these two so much, and it always thrills me to have more people join in. Obsession and possessiveness are my two weaknesses, I always seek fiction with them. Your questions are very interesting, but I'm afraid I won't be able to reply without huge spoilers! If you don't mind, keep reading, if you do, better save it for later))
Possessiveness. It's demonstrated both subtly and strongly, and it applies to all areas at once. I will describe just some moments that immediately come to my mind because it's been a while since my complete re-watch.
In E9, Ciel is in danger. Finnie is one second from saving him - he's running toward him and is almost there. Instead of letting him save Ciel, Sebastian carelessly and violently pushes him away and covers Ciel himself (before pulling him closer and staring at him as if he's about to kiss him). He wants to be the one to save him, he sees this as his unique right. A part of it comes from the contract, but in this situation, it's not about it - the "why" will be seen later.
In E10, Abberline rushes after Ciel and reaches out to touch his shoulder because he has a question. Sebastian slaps his hand away and asks him not to touch Ciel. There is really no need for it, Abberline is harmless, so it's about possessiveness.
In Book of Circus, when Ciel is having a panic attack (the moment is also known as asthma scene), Sebastian leans closer to him with a blissed out look on his face and asks him to call him by his name. He loves hearing it from Ciel's lips (and he loves his agony but that's another discussion).
The next thing that stands out in my memory is Book of Murder, and the way Sebastian was all weird about Ciel liking Doyle's stories. Granted, several interpretations are possible here. However, Sebastian then makes Ciel undress (case reasons) and wear his coat, and he looks very smug about it. Ciel even asks why he insisted on it and Sebastian just says something like, "Isn't it fortunate how it can cover you whole?" He clearly enjoys Ciel wearing his clothes.
Then there are the last episodes of S1. Sebastian's dislike for Abberline has grown since Abberline bonded with Ciel a bit. So when Ciel is in danger and Abberline dives to protect him, Sebastian doesn't push him away, like he did with Finnie, and he ignores the contract. Instead, he lets Abberline sustain a mortal blow on Ciel's behalf and die, and then he even gets an ugly grimace and spits that Abberline was a fool. Again, there are several reasons for it, but possessiveness is a big part of it, in my eyes.
The whole S2, Sebastian's possessiveness becomes very textual. For instance, he tells Claude, the other demon, that the mere thought of him touching Ciel makes him (Sebastian) sick. He repeats how he won't let him touch him. Alois, Claude's master, notes that Sebastian is infatuated with Ciel. Then we have absolutely beautiful moments in E10 of S2, where Claude dresses Ciel and compliments him and Sebastian is so violently livid that he destroys the entire forest around the house, breaking trees with every touch Claude administers. When he sees Hannah touching Ciel, he also becomes livid and even gains his demonic form before going and straight-punching Claude in the face :D
I'm sure there are more tinier things, but I don't recall them right now)
Obsessiveness. Obsession is basically there every episode. It's in how fervently Sebastian treats his duties, the care he takes in dressing Ciel (which is a huge contrast with Claude, who's a more typical demon not interested in his master beyond his soul). How he's genuinely terrified when Ciel is in danger and it doesn't look like his soul is the only thing he worries about. The way he stares at Ciel sometimes - so intense, so admiring, so fond.
From more textual examples: I liked how Sebastian tore into Prince Soma for basically not being Ciel. How he ridiculed his every trait that goes against the traits Ciel possesses.
In E18, when Ciel falls into Sebastian's arms after choosing revenge over freedom, Sebastian is so, so reverent about him, his voice is so tender:
Sebastian: How reckless you are… You always exceed my expectations. As expected from my soul… No, as expected from my Young Master.
When Angela was torturing Sebastian, she was visibly disturbed at the level of his devotion to Ciel. This is a bit of the conversation they have:
Sebastian: Even so, my Young Master is still going. Even if all the game pieces are taken away, the King is left. He'll never admit defeat. My master is that type of a person.
Angela: One day, the real Doomsday will come. On that morning, you'll have as many souls as you want. Just give up that boy.
Sebastian: I refuse. I'm tired of my previous life, only knowing to eat. I only want my Young Master. I don't want anything else besides him.
When Ciel comes close to breaking the contract, Sebastian doesn't attack him like he tried to do in the Book of Atlantic flashback. Instead, he leaves, but he also keeps following him, going as far as secretly leading him to where Ciel wants to go. He then watches Ciel obsessively from the roof. Angela is talking to him, making offers, trying to engage him, but Sebastian just throws a distasteful glance at her and immediately gets back to staring at Ciel.
There are way more moments like this in S1, but this is getting so long that I'll get to S2 now. The entire season is about obsession. Sebastian doesn't kill Ciel just because he doesn't want to. He comes up with stupid excuses that fall under even superficial scrutiny. He plans to help Ciel achieve his revenge for the second time because Ciel lost his memories. Claude calls him out on being utterly obsessed, and Sebastian states how special Ciel is and how he's worth it. Also, Alois' entire wish revolved around hurting Sebastian, and to achieve this, Claude decided to steal Ciel from him.
Sebastian is so upset that Ciel remembers few things that even the entire E2 is called "The Lonely Demon". He's so angry about Claude touching and keeping him that he tries to use Grell as Ciel-substitute a bit, serving and making them tea. At the very end, Sebastian once again finds himself unable to kill Ciel even though he loses every reason to serve him. Technically, the contract still binds them, but we saw that demons can easily kill their masters if they want. Instead, Sebastian is so lost about his own feelings (along with Ciel) that he tries to follow the same rituals, such as pretending he's making tea for Ciel when in fact the cup is empty. He ends up carrying him to Hell with him, even though again, he has every reason to kill him.
There are lots of other nuances and great details. Their relationship is so complex and beautiful, and so much is left in the subtext that I just can't get enough of it. I hope you keep enjoying watching it!
Added: I completely forgot about a few points! When Ciel's soul is gone and his unconscious body remains, Sebastian keeps putting him in bed, making tea for him, talking to him about his plans, and even reading him books. This is just… amazing, considering who he is))

Hey (sorry, I accidentally deleted the first ask)! So, Black Butler's S2 finale. First, I have to mention that I love it to death and it exceeded all my expectations. I really wonder if it reflects manga's planned ending in a way as Yana included many clever parallels into S2.
Apart from the bare facts, though, that Ciel and Sebastian stayed together for eternity, the conflict between them is largely unresolved. The whole situation is very complicated and yet it's barely addressed on a textual level, which is probably why many people seem to think that Sebastian has been tricked into staying Ciel's butler forever. It's not true at all because Sebastian has always been free to leave regardless of the contract, and he is free to leave in S2 finale as well.
Sebastian left Ciel in S1, in France. He himself told Ash/Angela that he no longer has a Master. Ciel called him over and over again, Ciel was in danger, Ciel was hurt, but Sebastian didn't come, even though he continued to watch over him. So, we can assume that Sebastian can easily leave at any point he becomes fed up with the contract.
Furthermore, in S2, we see how Claude literally kills Alois despite being bound to him through contract. He kills his Master and nothing happens to him, he's free to do what he wants. Sebastian is far more dedicated to Ciel, but obviously, he has all the rights to either kill Ciel after his soul becomes lost forever or just abandon him to fend for himself.
Sebastian doesn't do it. He stays with Ciel as his butler and continues to follow his orders. He allowed him to be turned into demon to begin with - Hannah told him that as soon as Ciel wakes up, he will do it as a demon. Logically, Sebastian could kill Ciel before he wakes up. If he didn't trust Hannah's words, he could check himself whether Ciel still has a soul - he did so in S1 finale, sensing that it was stolen. What does he do instead? He gently catches Ciel and waits for him to open his eyes.
That's not to say that Sebastian is happy. For one thing, he definitely looks somber and conflicted till the rest of the episode, and he does attack Ciel when he wakes - however, it's not to kill. Sebastian says he didn't intend to kill Ciel when asked about it and we have no reason to doubt his words because Ciel lived and Sebastian never tried to hurt him again. Immediately after the attack, he actually helped Ciel get on the boat. So, personally, I think Sebastian was angry and his attack was an explosion of rage and dissapointment - Ciel's soul did belong to him rightfully. Later, I think he's conflicted because he understands that he doesn't have to stay with Ciel, but a big part of him wants to - a part that's attached to Ciel, "infatuated" with him, using Alois' words; a part that made him prolong their contract over and over again, even going as far as pretending Ciel hasn't completed his revenge yet. Even Claude was shocked by it.
The question is, does Ciel know that Sebastian stays with him because he wants to in the finale? Ciel tries to show that he's in control, but there are flashes of vulnerability that point out that he's not sure where they stand any more. Both he and Sebastian are so confused that they both choose to maintain their habits in attempt to pretend that everything's normal. The morning tea, the dressing ritual - all to avoid thinking of what happened and its repercussions. It's adorable in a way but it's also frustrating because they just refuse to voice their genuine thoughts and feelings.
Ciel needs Sebastian, is dependent on him, I'd even say that he loves him - Sebastian was confirmed to be his most treasured 'otherworldly' creature, which places him in even higher regard than Ciel's parents. Ciel is terrified of being abandoned by Sebastian, so he'll never break the contract despite knowing it'd be fair and he's not ready to discuss it. Sebastian, in turn, experiences feelings for Ciel that are clearly foreign to him, and since he's in denial, he also won't talk.
As the result, we have two demons who want to stay together for eternity yet who don't understand why they would want such a thing and thus keep silent. That's a conflict that only fics can solve at this point :D
Ciel Phantomhive was the most confounding blend of contradictions that Sebastian had encountered in his devilishly long existence.
From the very first second he felt that unique, twisted soul, he was enthralled. The blinding light it emanated wasn't dulled by the bitter dark stains spreading across its surface, not in the slightest. How something so pure and innocent could have such dark edges, Sebastian didn't know, and he didn't particularly care.
The pureness formed the essence of this soul, making it into white canvas waiting to be filled with intricate, exquisite patterns. The shadowy stains that already darkened some of its bits spoke of pride, mercilessness, coldness, and rage, rage so profound that Sebastian couldn't believe it belonged to such a young soul. The darkest spot marked hatred and hostility, and the flavour of this peculiar combination was entirely maddening, making him salivate.
He thirsted for this soul. This soul was worthy of forming a contract, and by the time he was finished with it, it would be even more delicious — bitterer, sweeter, and spicier. The best meal he'd had so far.

Considering what you said about not liking series where the main character dies, how are you going to feel about the end of Black Butler? (Assuming that you read the manga, anyway. I don't know if the anime will ever have a cohesive ending.) Personally, I hated season two's attempt at an ending. I think the series can only be satisfying if Ciel dies and Sebastian gets his payment. But what are your thoughts?
I don't read manga, not yet, but I do follow the spoilers on it closely! Personally, I don't believe it will end with Ciel's death in a definite way because of how S1 and S2 of the anime ended. Yana was involved in them to an extent, and they introduce amazing parallels to manga. Both end ambiguously: in S1, we have no idea whether Sebastian did consume Ciel's soul since it's only implied. S2 ending opens many possibilities, which I love - we are left wondering whether Sebastian is going to kill Ciel, whether Ciel is going to release him from the contract, whether they'll reside in hell together, etc. I believe manga will follow a similar pattern of ambiguity. If it does end 100% tragically, then I probably won't read it, at least not completely, because major character death upsets me too much :(
Why I don't think Ciel's death is a good idea: honestly, it's purely subjective. I feel like happy endings are more complex and gratifying, and I think Ciel's death is going to make Sebastian (and Ciel) miserable. I really love a small scene created by Yana for the Red Valentine event. It's an AU version of S1, where Sebastian ends up consuming Ciel's soul and then finds himself lost, miserable, and lonely. He makes a cake for Ciel's birthday before remembering that there is no one to eat it. He remembers dressing Ciel, being with him; he re-evaluates how precious that time was and concludes that he's surrounded by nothing but loneliness now. This is the ending I think Sebastian will get if he kills Ciel. He will continue to exist, but he'll stop living. He'll stop seeing colors and tasting joy like new experiences and feelings.
S2 ending is the most perfect for me because Ciel clearly loves being a demon, and while Sebastian cannot decide how he feels about it yet, he understands he can't force himself to kill Ciel even now. They end up together and 'unhappy for now', with many possibilities for us to imagine. I think Ciel and Sebastian complete each other in many ways, and I'd love for them to live, thrive, and cause chaos.

TGSTLTH Spoilers: My guess for Sebastian's real name is Stolas. I also love the notion of obsession being catchy, though poor Ciel. However no one is more obsessed with Ciel than Sebastian :D. I find the subject of beauty in Black Butler fascinating. Sebastian is of course attracted to Ciel's soul first and foremost but he does find Ciel's appearance physically pleasing. If Ciel was plain how do you think that would affect Sebastian's attraction to him, or it wouldn't have any affect?
You're right, it's Stolas! You're the first person who made this guess :D I spent a while trying to find the most fitting description for Sebastian, and though there was nothing absolutely perfect, I found the one of Stolas satisfying,
Stolas is a Great Prince of Hell, commands twenty-six legions of demons. He teaches astronomy and is knowledgeable about herbs, plants, and precious stones. He is often depicted as a raven or a crowned owl with long legs.
While "raven" seems to be a mistranslation and the correct word is "night-raven," both suit Sebastian. In the anime, the regular raven frequently accompanies him in mysterious ways; the shapes of his shadowy feathers resemble those of an owl.
Sebastian shows interest in unique things, so "precious stones" should be right up his alley. Astronomy falls into the same category as I think it's weird for demons to show interest in the skies. Also, "Ciel" meaning "Sky" in French. Sebastian has always been an odd demon, so this combination of interests works well with him.
"Stolas" also reminds me of "stolen," which creates possessive associations in my mind. In romantic terms, Sebastian stole Ciel's soul & body & heart and got his stolen in return.
As for the second part of your question… If Sebastian believed Ciel to be plain, I think nothing would change much, but some changes would happen. For instance, he would be less possessively concerned over who pays attention to Ciel and why, especially later on. He'd feel more satisfied with knowledge that Ciel doesn't turn heads as he walks and more confident in his abilities to keep him ensnared. But the fascination and the obsession would be the same because Ciel's soul is what Sebastian sees first and foremost. He'd still be attracted to him, though I imagine it would take him much longer to start experiencing it. Sebastian is a vain creature with a huge appreciation for aesthetics, and he'd spend more time on developing a physical pull toward plain Ciel.
Even though it was half past midnight, Ciel couldn't sleep. He watched the shadows in his room dispassionately, waiting for his consciousness to fade, but when the hand of the clock moved towards one and nothing happened, he'd had enough.
Quietly, hoping that everyone had already gone to bed, he slipped off the bed and crept to the door. The kitchen had to be empty at this time and there had to be some dessert left after supper. Unless, of course, his fools of servants had secretly eliminated it.
Knowing that Sebastian would send him back to bed if he caught him, Ciel quickened his pace, looking around suspiciously. Despite all the time they'd spent together, he still didn't know the limits of Sebastian's hearing, and while he could ask directly, he knew Sebastian would be deliberately vague and uncooperative. The bastard loved taking him aback and letting him make wrong conclusions about his capabilities.
Sebastian was watching him with dark, inscrutable eyes. Anyone else would have said that there was nothing but deference there, but Ciel knew better. He'd learned how to read every reddish flash of emotions, every tiny wrinkle or crease that Sebastian's unnaturally flawless face reflected. And he could say confidently that right now, Sebastian was planning something. Again. Something aimed to provoke a reaction from him.
It would have been amusing if Ciel had any idea of what this plan might entail and what prompted Sebastian to start planning in the first place. Then again, when wasn't this demon planning something? Even just to spite him — especially to spite him.

We all know that Hannibal loves Will because Will is Will, he literally turns down all the offers from others (Tobias, Antony and Francis). Hannibal only wants to be seen by Will. Will, on the other hand, well, I feel like if there was another person that offered him the same opportunity for understanding, he wouldn't necessarily refuse. He doesn't really reject Matthew, you know. And also, Will strikes me as someone too straight. In short, I think Will does have some sort of feelings for Hannibal, but I am not sure they are romantic, and it seems to me that Will could have Hannibal replaced if the circumstances allowed.
Hello! I mostly voiced my thoughts about how Will expresses his feelings in this meta - if you haven't read it, I think you might be interested. If you have, then I'll add some more thoughts here.
You are right in that Hannibal's feelings for Will are more verbally romantic. Hannibal is more open emotionally on a whole: he's at peace with himself, he understands what he wants and what he feels. Will doesn't have the same luxury. Throughout the show, he undergoes various self-conflicts and he's very confused about his own feelings.
Personally, I don't really consider these feelings ambiguous. Will's romantic love in the show is confirmed through his actions and reactions. He's silent when Bedelia asks him if he's also in love with Hannibal. This silence is an undeniable "yes" in my eyes - otherwise, there is simply no point in it. If he wanted to say no, he would have done it. He would have snorted or asked Bedelia why in the world she would think that. Instead, we have a long focus on Will's pained face, his silence, and a slow blurring into Hannibal. This is a standard story-telling technique - silence to such questions speaks very loudly in shows/movies. And based on Bedelia's face, she knew very well what the answer would be. After this, Will stages Hannibal's escape and chooses him above everyone else before running away with him, and I think it's one more confirmation of his positive answer.
'Hannibal' is not the show where lots of things are stated directly. In fact, many viewers considered "Is Hannibal in love with me" redundant and strange exactly because it was too direct for a show like this. Will's feelings are pretty glaring to me without any verbal declarations. The fact that he loves Hannibal as a friend is textual. The romantic side is revealed through visible jealousy (otherwise, what's the point of it? He clearly hates the idea of Bedelia being with Hannibal instead of him), lingering looks, anguished glances, flirtations, and so on. There is sexual fantasy of S2: Will tries to fantasize about Alana as he's having sex with Margot. However, he sees the image of the Stagman (Hannibal's reflection) near the fireplace. He actually sees Hannibal's room and consequently, he sees himself in it (or he sees their rooms united). Will's eyes widen and then his vision begins to contract, focusing on the Stagman, on how it's sitting and then standing up in all its dark glory. Will is having an orgasm at this very moment, imagining the Stagman's face very close. Still through the misty eyes, he tries to focus on Alana again, but his gaze moves up to the Stagman above her, as if he can't help himself. He and Hannibal reach orgasm first, with Alana and Margot following them.
There are some bits in the text itself, too. Bedelia called Will out on "visiting his old flame". This is romantic. The whole "bride" and "wife" stuff is romantic as well. Will flirts with Hannibal with obvious relish - his "I'm yours" quote and an annoyed expression when Hannibal didn't react happen for no reason other than him feeling like this. "I need you… please" was also shown as flirty, and Will enjoyed it, it came naturally to him. I don't think he would feel comfortable with Hannibal if he wasn't in love with him back. One-sided infatuation is extremely awkward.
Finally, the show promotes the idea of their unity. It's not the show about unreciprocated love and personally, I can't see it ever being a part of the plot, especially after all "we are one" elements. Will's stubborn desire to be normal was holding him back, not his lack of feelings.
I've never seen Will as straight: he only ever has shallow attraction to Alana that conflicts with his pull to Hannibal as shown in a sexual fantasy of S2. His sex with Margot and kiss with Chiyoh are done so emotionlessly, I think it emphasizes that he's going through motions. It's impossible to determine his sexuality with what we've seen, especially since the only deep bond he has is with a man.
About turning down offers from others: I do think Will showed zero interest in Matthew. He was cold and manipulative with him, he showed no willingness to really open up or strike any kind of friendship, and he never even mentioned him again after that episode. Will's entire focus has always been on Hannibal. I don't believe Hannibal is replaceable to him in any way since their obsession is mutual. Will admires him, wants to be loved by him, is jealous whenever Hannibal pays someone else attention, can't let him go no matter what happens and how much time passes.
As an example, when Will comes looking for Hannibal in 'Primavera', after his pining and his confessions to Alana and Jack, he's almost reverent about him.
Will: We were all supposed to leave together. He made a place for us. Why did I lie to him? He gave me a chance to take it all back, and I just kept lying.
Will keeps talking about him over and over again.
Will: This isn't Hannibal, it's just where he begins. Beyond this, far and complex, light and dark, is the vast structure of his mind. A thousand rooms, miles of corridors. Everything he remembers, wonderfully and fearfully reconstructed.
Will touches the Valentine Hannibal left for him and watches it come alive under his fingers; he lies in that spot to feel physically closer to him. He says:
Will: A valentine written on a broken man … I do feel closer to Hannibal here. God only knows where I would be without him … He left me his broken heart … He misses me.
He looks on the verge of tears, so Hannibal's gift touched him. Will is overcome by emotions. At this very moment, his more frightened side suggests that Hannibal is also playing with him.
Will: Hannibal follows several trains of thought at once without distraction from any, and one of the trains is always for his own amusement.
We know it's not the case, especially here, but Will has trust issues and a low self-esteem. He's worried that Hannibal's feelings for him aren't as strong as he thinks they are, which is why he's not sure how to react himself. He asks himself, "I still want to go with him?" and replies, "Yes." He wonders about what life they'd have if they left.
Will: What if no one died? What if we all left together? Like we were supposed to. After he served the lamb. Where would we have gone? … In some other world.
This is obsession, this is a love letter at its finest. Will is as focused on Hannibal as Hannibal is focused on him, and I agree with the part of Bedelia's words that they cannot live without each other. I think we have enough romantic text, subtext, actions and reactions to understand that Will is in love with Hannibal, even if it is not stated verbally.
